What. A. Weekend.  Wow!  So many playoff games and surprises along the way.  You always expect the playoffs to be good, but this year, it feels like they’re better than ever.  I’ll admit it – I’m hooked.  And each game reminds me how the Big Game will be here before we know it.

Confession: I’m already planning my menu for the Big Game.

No shame in that, right?  Better to be prepared I say…  Actually, if I’m being completely honest, there aren’t that many changes to my menu this year.  Pizza is always on our game day menu, as is dessert.  This year, I stocked up on frozen Red Baron Pizza when I was at Target, because no one wants to be waiting for a pizza to arrive on game day.  That wait will be hours long, and I don’t have that kind of time when I have hungry people in my house.  My husband likes the Red Baron Thin Crust pizzas and my girls prefer the Red Baron Classic Crust varieties, but, either way, there’s crust perfection in every bite.  Red Baron Pizzas were even on sale with an additional 5% off when you use Cartwheel.  You know I’m a sucker for a good sale.

Which only left me with a few appetizers to prepare and a dip.  But which dip?  I wanted to do something a little more creative than salsa, but still wanted a taste that would compliment the pizza.  And then it came to me – 3 Ingredient Bean Dip!  This is one of those easy recipes that I’ve been making for years and I can’t believe I haven’t shared on my blog…until today.3 Ingredient Bean Dip for Football Game

Besides going well with pizza, the best thing about this dip is how you can customize it.  Want to add a little kick?  No problem!  Use refried beans with jalapenos, use hot salsa, or top with sliced jalapenos.  Want to tone it down a bit?  You can do that too!  Just add more cheese or use mild salsa.  You can even make it festive for football season by adding a little bit of sour cream using a plastic bag.  It’s an optional fourth ingredient, but so yummy.  Here’s how you can make it –

You will need:
1 can refried beans (15 oz.)
2/3 cup shredded Mexican cheese
1/2 cup salsa
sour cream for garnish (optional)4 Ingredient Bean Dip Ingredients

Step 1 – Combine refried beans, cheese, and salsa in a medium sauce pan over medium high heat.  Stir well.

Step 2 – Heat until cheese is melted, approximately 5-8 minutes.  Be careful to watch your dip closely or it will begin to burn on the bottom.  When the dip is completely heated and the cheese is melted, remove from the stove and place in a serving dish.  Allow to cool a little before serving.

Tip: You want to serve this dip warm, but if it’s too hot, the sour cream used for the garnish will begin to melt and dissolve.  Let this dip sit for a few minutes before attempting Step 3.  That way, it will be warm and festive!3 Ingredient Bean Dip Directions

Step 3 – Optional – Once the dip has cooled a bit, garnish using the sour cream.  If you want to make your dip look like a football, simply put the sour cream into a plastic or pastry bag and snip of the end of one of the corners.  From there you can “draw” on your dip any way you’d like!

Serve with chips…but, if you’re serving to a group, be sure to get a bite before it’s gone.  This dip tends to go very quickly!
