Cereal Cookies with Savings from Hopster Mobile Rebates {Recipe}

Now that we’re walking to school each morning instead of driving, I’ve struggled when it comes to my kids’ breakfasts.  They used to have time to eat as we waited in the mile long car line, but that time is suddenly missing, leaving me wondering if they’re really getting enough nutrition to start their day.  I had originally hoped that walking them to school would get them into the school cafeteria in time for breakfast, but unfortunately that has not been the case.  My younger daughter attempted breakfast twice only to have the bell ring right as she sat down with her food after waiting in a long line and my older daughter has sworn off all cafeteria food as “gross”.  What’s a mom to do?

As I stood in the breakfast aisle after dropping them at school last week I was stumped.  We really don’t have time for cereal in the morning, but if they had their way, that’s definitely what they’d pick.  I really don’t want them loading up on those expensive, processed breakfast muffins, but that’s about all the time we have in the morning.  And then it hit me – Breakfast Cookies!  Now, don’t get me wrong, breakfast cookies aren’t new to me.  I’ve made them before and even shared the recipe here, but it was time for a new recipe.  One that incorporated that breakfast cereal crunch they crave in the morning, while still being totally portable.  Cereal Cookies!

So right in the middle of the aisle, I grabbed my phone and opened the new Hopster Mobile Rebates.  I’ve used the Hopster website in the past to print coupons, but lately I’ve been slacking when it comes to printing coupons in advance and find myself relying on the Hopster app for mobile savings.

Think the Hopster app is complicated?  Wrong!  It’s so easy to start saving with Hopster rebates!  Simply choose your rebates from a large selection of brands and then shop at your favorite store (any store will do!).  When you’ve completed your purchase, simply take a picture of your receipt showing the items you purchased and rebates will be redeemed and the cash credited to your PayPal account as soon as the redemption is validated. Unlike so many other savings apps, there is no need to wait to reach a certain number or value of redeemed offers!

I quickly grabbed a box of my kids’ favorite cereal – which also happened to have a savings featured on the Hopster app – and hurried home to make some cereal cookies.

The result?  Delicious!  Not only did my kids gobble them up, but I gobbled up the savings on Hopster.  Okay, I might have had a taste or two of an actual cookie, but mostly, I loved the savings…

To check out all the savings on Hopster, download the app and don’t forget to take a picture of your receipt after shopping, highlighting or circling your purchased item for quicker rebates!  And here’s how you can make my delicious breakfast cookies with just about any cereal that you can find on Hopster!

You will need:
1/2 cup butter or margarine
1/4 cup white sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla extract
3/4 cup flour
1/4 tsp sea salt
1/2 tsp baking powder
1/2 traditional oats
1 cup of your favorite cereal found on Hopster

Step 1 – Preheat oven to 375 degrees.  Line a cookie sheet with foil.

Step 2 – Combine butter/margarine, sugar, brown sugar, egg, and vanilla in a medium sized mixing bowl.  Beat on medium speed until smooth.

Step 3 – Combine flour, salt, and baking power.  Stir until well combined.

Step 4 – Add the dry ingredients blended in Step 3 to medium sized mixing bowl containing the butter, sugar, egg, and vanilla.  Add ingredients slowly, stirring until well combined.

Step 5 – Stir in the traditional oats slowly and then add your cereal at about the same pace.  The batter should be stiff (don’t panic!).  Drop batter on to a cookie sheet using a tablespoon.  Bake for 12-14 minutes, or less for smaller cookies.  Allow to cool completely and the bag them up for the kids to eat in the morning!  

Tip: These cookies tend to work best with bran flake and oat cluster type cereals – which I just happened to luck out and find featured on Hopster – but just about any cereal can be used. You can also add in dried fruit, cinnamon, nuts, or variety of other ingredients to fully customize your cereal cookies.

Once cooled, enjoy these yummy sweet and crunch cookies…and the Hopster savings too!
