My house is pretty quiet right now, but it’s really just the calm before the storm. As of tomorrow company starts arriving for Everett’s birthday, and judging by the family that we have staying with us and the ever growing list of RSVPs to his birthday party this weekend, my house is going to be bustling very soon. I’m a mix of excited (seriously, how did he get so big?!) and overwhelmed.
In preparation for my soon-to-be full house, I hit Walmart earlier this week to stock up on supplies, and was thrilled to see that they’re now offering International Delight® coffee creamers in half gallon sizes. With a house full of company, I’m certainly going to need the half gallon size!
But as I sat deciding between the International Delight® French Vanilla, International Delight® Caramel Macchiato, and International Delight® Cold Stone Creamery™ Sweet Cream, I wondered what I was going to serve with it. After staring at the International Delight® French Vanilla a little longer than the others, it came to me…French Vanilla Coffee Cake!
This dense, delicious French Vanilla Coffee Cake is the perfect cake to have on hand for company, and easily saves for 3-5 days so you can make it ahead of time. It’s pretty easy to make too, with total combined preparation and baking time of about an hour.
But the real key to this recipe is the International Delight® French Vanilla creamer. While some may only think about putting creamer in their coffee, it actually makes a great ingredient when you want to add a bit more flavor to your recipe. The rich vanilla of International Delight® French Vanilla makes this coffee cake so much more flavorful than using regular milk. And, of course the new International Delight® Half Gallon Creamer bottle is easier to hold and pour when baking, as compared to traditional milk cartons or other creamer cartons.
And think about it – trying a recipe with one International Delight® creamer leaves you room to try another in your coffee. I think International Delight® Cold Stone Creamery™ Sweet Cream might be my new favorite! There might not be enough to share when the guests finally do arrive!
You will need:
1 1/4 cup flour
2/3 cup sugar
2 tsp baking powder
1/2 cup International Delight® French Vanilla + 3-4 Tbsp for glaze
1/3 cup Greek vanilla yogurt, any brand
2 Tbsp vegetable oil
3 tsp vanilla extract
1 cup confectioner’s sugar
Step 1 – Preheat oven to 350. Grease and flour an 8×8 baking dish or coat in cooking spray. I actually used an 8×8 disposable baking tin because a mom with company coming into town is a mom who doesn’t have time for dishes!
Step 2 – Combine all the dry ingredients (flour, sugar, and baking powder) in a medium sized mixing bowl and stir well.
Step 3 – Combine all wet ingredients (International Delight® French Vanilla, egg, vanilla Greek yogurt, vegetable oil, and vanilla extract) in a small to medium sized bowl and whisk together.
Step 4 – Add the wet ingredient mixture to the bowl containing the dry ingredients and gently stir. You want to make sure that you don’t go overboard with the stirring here. In this case, less is more. You just want the ingredients to be combined and mostly smooth (tiny lumps in the batter are okay).
Step 5 – Pour batter into your 8×8 baking dish and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
Step 6 – Combine confectioner’s sugar and 2 tablespoons International Delight® French Vanilla, whisking together until smooth. You want your glaze to be thin, but not too thin. Add more International Delight® French Vanilla until you reach your desired consistency. and then drizzle glaze over the top. Don’t hold back. This cake deserves a generous drizzle! Slice it however you’d like, but I prefer to cut it in half and serve one half at a time (that always leaves me with a second cake in the fridge or freezer in case more guests arrive). Serve with your favorite coffee and International Delight® Cold Stone Creamery™ Sweet Cream! Enjoy!
