Oh-So-Easy Baked Pumpkin Donuts {Recipe}

oh-so-easy-baked-pumpkin-donuts-recipeMy husband likes to tease me about my love of all things pumpkin.  Pumpkin muffins, pumpkin bread, pumpkin cookies, pumpkin pancakes, you name it, I want it…and he doesn’t get it.  At all.  So every year my husband sits baffled as September hits and I head into the kitchen to bake all my favorite pumpkin dishes and discover a few new ones.  This year’s favorite?  Oh-So-Easy Baked Pumpkin Donuts!oh-so-easy-baked-pumpkin-donuts-on-a-plate

Honestly, there’s so much to love about this recipe.  For starters, it only contains 4 ingredients and takes about 20 minutes to prepare.  That’s right, 20 minutes from beginning to end.  That means you could be in your house right now and, as long as you have the ingredients, you could be eating dense, delicious pumpkin-y donuts in just 20 minutes.  oh-so-easy-baked-pumpkin-donuts

And while there are relatively few ingredients, you still have plenty of room to customize this recipe.  The amount of pumpkin spice in the batter can range anywhere from 1 to 2 teaspoons depending on your love for pumpkin.  You can also skip the sugar topping and eat them plain.  They’ll taste just as delicious.  Promise.oh-so-easy-baked-pumpkin-donuts-without-cinnamon-sugar

To top it off these are the moistest, most flavorful pumpkin donuts I’ve ever tasted.  I actually prefer them to the donut shop down the street.  Why spend money on one donut when you can spend a little more and have an entire batch?

While my husband may not “understand” my love for all things pumpkin, I can assure you, it has it’s perks…No sharing. baked-pumpkin-donuts-and-coffee

You will need:
1 yellow boxed cake mix
1 can pure pumpkin (15 oz)
2 teaspoons + 1 teaspoon pumpkin pie spice
1/2 cup white sugar

Step 1 – Preheat oven to 350 degrees and spray your donut pan to prevent sticking.

Step 2 – Combine yellow cake mix, can of pumpkin, and 2 teaspoons pumpkin pie spice and mix well.  Once blended, spoon or pipe the batter into your donut pan.  If you don’t have a piping bag, you can very easily make one using a ziplock bag and cutting off one end.  I found that piping the batter into the pan gave me more control over how much batter was taking up each cavity in the donut pan and prevented spillage.

Step 3 – Bake for 10 minutes.  Remove from oven and allow to cool completely.

Step 4 – Combine 1 teaspoon pumpkin pie spice and 1/2 cup white sugar in a shallow mixing bowl.  Place each donut in the bowl, coating each side with the sugar mixture.oh-so-easy-baked-pumpkin-donuts-in-process
