I’ve been in a peanut butter kind of mood lately. I liked it but didn’t eat a lot of it. Recently, I made some cookies with peanut butter and suddenly I’m in love all over again. I can’t get enough.
Over the weekend while I was making my kids breakfast, I started thinking about how delicious peanut butter would taste in the McCann’s Steel Cut Irish Oatmeal® Quick Cooking Rolled Oats that I normally make for my kids. I made myself a bowl of oatmeal and dropped a tablespoon of peanut butter and teaspoon of strawberry preserves on top. After a quick stir, I gave a try…
It. Was. Divine.
The rich, unique taste of the McCann’s Quick Cooking Rolled Oats was the perfect match for the peanut butter and jelly, I almost couldn’t believe it. I was thrilled with my new breakfast creation…until lunch rolled around and I found myself craving more. It was then that I decided to whip up a cookie that would roll up all the flavors that I loved into a snack that could be eaten anytime. Best of all, you only need 5 ingredients and the whole process takes less than 30 minutes. You know how I love easy recipes! Here’s how you can make them!
You will need:
2 ripe bananas
3 Tbsp smooth peanut butter
½ tsp honey
1 cup McCann’s Quick Cooking Rolled Oats
Strawberry preserves
Step 1 – Preheat oven to 350 degrees. Line a cookie sheet with foil or spray with non-stick spray.
Step 2 – In a medium sized mixing bowl, mash the bananas using the back of a fork. Add peanut butter and honey to the mixing bowl and stir until well combined. Slowly stir in McCann’s Quick Cooking Rolled Oats, until well coated with the banana, peanut butter, and honey mixture.
Step 3 – Drop 1 Tbsp of cookie batter on to a cookie sheet. Gently press the back of the back of the tablespoon into the middle of the cookie dough, creating an indented area for the preserves.
Step 4 – Bake for 15 minutes or until the edges start to turn golden brown. Remove from the oven and allow to cool.
Step 5 – Spoon 1 – 1 ½ teaspoons of strawberry preserves into the center of each peanut butter and oatmeal cookie.

We eat the Steel Cut Oats. It took the kids a little while to warm up to the texture, which is a bit different than what they were used to, but now everyone likes it, espcially with a little peanut butter or strawberries.
The Oatmeal Cake, plus I would try some other things with the kids.
