Let’s talk Christmas for a moment, shall we? Because it’s not that far away. And my family’s annual Santas & S’mores Christmas party? Yeah, that’s even closer. In fact, it’s in less than 3 days. THREE. Oh my. So much to do, so much to plan. As much as I’ve been looking forward to this party, I’m still feeling a bit overwhelmed right now. Because this year the party is bigger than ever before. What was once a small get together with one or two other families has now become a huge gathering with a 50-60 person guest list and kids roasting s’mores in a fire pit in the driveway as they wait for Santa to arrive in a fire truck. It will be an event. A successful event, if I have any say in it.

We’ve set our theme, sent invites, decked our halls, have crafts planned for the kids, and the food will be divine. Actually, for the first year ever, I’m actually encouraging guests to bring a dish with them. In the past, guests had offered or showed up to the part with something to share, but this year, it’s official – it’s a pot luck holiday gathering. It seems that everyone likes to cook and bake around the holidays, so why not let them help out with the menu? If I could pass on one piece of holiday party planning advice to you, it would be to encourage your guests to bring a dish to share.

So what dish are we sharing this year? Pillsbury™ Peppermint Crunch Sandwich Cookies! These amazingly delicious cookies are a new spin on my Double Chocolate Peppermint Crunch Cookies from last year and the perfect addition to a holiday pot luck table!Pillsbury Peppermint Crunch

If you’re planning a holiday gathering, I highly recommend adding these delightful holiday clad sandwich cookies to your menu – you won’t regret it! Here’s how you can make them:

You will need:
1 box Pillsbury™ Moist Supreme® Devil’s Food Cake
1 container whipped topping (8 oz, thawed)
1 egg
1/2 cup semi-sweet mini chocolate chips
1 container Pillsbury™ Creamy Supreme® Vanilla Frosting
1 container marshmallow cream
1/4 tsp peppermint extractPillsbury Peppermint Crunch Sandwich Cookies Ingredients

Step 1 – Preheat oven to 350 degrees. Line cookie sheet with aluminum foil or grease with Crisco.

Step 2 – Mix Pillsbury™ Moist Supreme® Devil’s Food Cake mix (found in the baking aisle in Publix), Cool Whip, and egg in a medium-sized mixing bowl until well blended. Batter will be stiff.Pillsbury

Step 3 – Slowly fold in the mini chocolate chips and stir gently until well distributed throughout the batter.

Step 4 – Using a spoon, drop the cookie batter onto the cookie sheet.

Step 5 – Bake for 13 minutes. Remove from oven. Allow to cool completely.

Step 6 – When the cookies are cool, pour frosting, marshmallow fluff, and peppermint extract into a medium sized mixing bowl and beat on low until well combined, approximately 1-2 minutes.

Step 7 – Crush peppermints using a mallet or rolling pin.

Step 8 – Liberally spoon and spread frosting mixture on the bottom of one cookie and then top with another cookie, then roll the edge in the crushed peppermint.

It’s the perfect holiday cookie and we’ll have plenty of them waiting for Santa when he arrives at our party this weekend!
