Marie Callender's Pot Pies and Easy Cranberry Orange SauceIn the legal profession, December is typically a pretty slow month.  Firms conduct year end reviews, try to wrap up old cases before moving into the new year, and some firms even close for the 2 weeks around Christmas and New Year’s.  But this year?  None of that’s happening…because this December has been crazy.  I’ve had a flurry of last minute hearings and depositions to cover, all of which needed my personal attention.  And just last week, besides being in front of 2 judges in 2 different counties, also I had 4 depositions in the course of 3 days in 3 different states (although luckily I was able to attend the depositions by phone).  For me, that’s a big week.  Huge.  It was a week that left me scrambling to cover my commitments at home and extremely thankful for the Marie Callender’s pot pies that had in my freezer.  Because no matter how busy my week may be at the office, the question, “What’s for dinner?”, greets me when I get home.Easy Cranberry Orange Sauce with Pot PieNow, I’ll be honest, I’ve made pot pies from scratch in the past using my own recipe, but it’s just not the same.  Because, no mater how hard I try, I can’t replicate the golden, flaky crust of a Marie Callender’s pot pie.  And my gravy is good, but doesn’t come close to the homemade gravy mixed with vegetables and all white-meat chicken in a Marie Callender’s pot pie.  It’s homemade taste wrapped up in my freezer anytime I need it.  And trust me, last week, I really needed some comfort food.

As I searched for the perfect side dish, I remembered that Easy Cranberry Orange Sauce my friend told me about just before Thanksgiving.  Did you know that you make your own cranberry sauce in a little over 3 hours with only 5 ingredients?  You can!  It really couldn’t be easier.  And it compliments pot pies perfectly,  If you’re considering making a pot pie in the near future, I highly recommend you try this recipe – you won’t regret it!

Easy Cranberry Orange Sauce RecipeYou will need:
1 bag fresh cranberries (12 oz.)
3/4 cup Orange Marmalade
1/2 cup sugar
1/4 cup water
1/2 tsp ground cinnamonEasy Cranberry Orange Sauce Recipe Ingredients

Step 1 – Combine all ingredients in the slow cooker and stir until well mixed.  Cover and cook on high for 3 hours, or until you see that some of the cranberries are starting to burst.

Step 2 – Remove lid and stir cranberries, pushing them against the sides and bottom as you stir.  Stop stirring once you’ve smashed most of your cranberries.

Note: At this point, the sauce will be thin.  Don’t panic, it will thicken up a bit during the next step.
