Smokehouse BBQ Stuffed Spuds {Recipe}

Tomorrow’s low is going to be 50 degrees!  Fifty!  I know for most parts of the country that might actually seem warm, but fifty degrees is a fairly low temperature here…and one that we typically don’t expect until winter officially hits.  I’ve started searching for our jackets because it looks like we will probably need them, in the morning/evening hours at least.

So you better believe that my mind went right to comfort foods when I sat down to figure out our menu for the next few days.  Soups, chili, mac n’ cheese, and baked potatoes…it’s going to be a great week for dinners in our house.  And at the very top of our menu were these Smokehouse BBQ Stuffed Spuds.

I made these Smokehouse BBQ Stuffed Spuds about a week ago and they were gobbled up.  I originally made them because they were quick and easy – perfect for a week night, since I only have about 20-30 minutes to get a fully cooked dinner on the table – but ended up falling in love with the smokey and sweet flavor of the pulled pork.  Before making these, I had never thought to stuff a potato with anything other than butter or a little cheese, but the addition of the pulled pork made it a meal.  Seconds were had by all.  Once you try them, you look at potatoes in a whole new way and you’ll find yourself searching for ways to bring the smokey and spicy flavor of FarmRich Smokehouse BBQ Pulled Pork to other dishes!SmokeHouse BBQ Pulled Pork BBQ Spuds

You will need:
6 medium sized Russet potatoes
Olive oil
Salt & Pepper, to taste
2 cups FarmRich Smokehouse Pulled Pork BBQ
1/2 cup shredded mild cheddar cheese
1/4 cup low fat sour cream
Chives, finely chopped
Butter (optional)

Step 1 – Prepare FarmRich Smokehouse Pulled Pork BBQ according to directions on the package.

Step 2 – Poke holes in the potatoes using the tines of a fork.  Rub the outside of the potato with olive oil and sprinkle salt and pepper to taste.  Microwave potatoes on high for 5 minutes, flip them over, then microwave for another 5 minutes.  If you’re feeling really ambitious, you could always bake them in the oven – 45 to 60 minutes at 425 degrees – but let’s face it, there’s no time for that after a long day at work.

Step 3 – Once cooked through, open the potato and top with FarmRich Smokehouse Pulled Pork BBQ, then cheese, low fat sour cream, and chives.  If you like butter on your potato, I suggest putting it on first after you open the potato up and then top it with pulled pork, cheese, low fat sour cream, and chives.  And if you want to take this meal a step further, add some bacon…because everything is better with bacon!
