Weekend Brunch: Easy Veggie & Alpine Lace Deli Cheese Frittata

Many thanks to Alpine Lace for sponsoring today’s story and for letting me share My Life Ingredients.This morning was a lazy morning in our house…even the kids slept in and then happily watched cartoons while I gathered the energy to actually get out of bed.  Since Hazeline’s birthday party was yesterday we have lots of family staying with us and our house is pretty full.  As I walked to the kitchen, I struggled to figure out what I could make that everyone would eat – my sister-in-law doesn’t eat meat, my grandmother has dietary restrictions, and my kids are just downright finicky.  Plus, we were rapidly approaching 11am by the time I started cooking and it wasn’t quite breakfast and it wasn’t quite lunch.  What to make?

I took a quick survey of our fridge and found that we had lots of veggies.  Tons of them.  I then spotted some eggs and some  Alpine Lace® Deli Reduced Fat Swiss Cheese that I picked up at the store on Friday.  And then it came to me – a frittata!  Packed with protein, a frittata was sure to keep the family fueled all day long.  Because, let’s face it, it’s going to be a long day and we all have lots of things to do: my sister-in-law’s flight home, my errands, and the long bike ride that my mom had planned with the girls.  Despite being a lazy morning, it was going to be a very busy day full of adventures!

So I got to work in the kitchen creating a frittata that would work for everyone – lots of veggies, egg to hold it all together, and some cheese on top to add some extra protein and flavor.  Because, let’s face it, everything is better with a little cheese on top!  Sure enough, everyone gobbled it up.  And my mom has even laid claim to taking the extra with her as a snack when she ventures home tomorrow.  A successful brunch indeed!For this recipe you will need:

4 Tbsp extra virgin olive oil
4 medium sized baking potatoes, cut into small cubes
8 large eggs
4 Tbsp milk
1/4 large onion, diced
1/4 red bell pepper, diced
10 spinach leaves, chopped
5 spinach leaves
6 slices of  Alpine Lace® Reduced Fat Deli Swiss Cheese
Salt & Pepper, to taste

Step 1 – Preheat oven to 400 degrees.

Step 2 – Pour olive oil into large skillet and heat over medium-high heat.  Once oil is heated, carefully place potatoes into skillet and season with salt and pepper to taste.  Cook potatoes until tender.  This took me about 8 minutes.  If you’re not sure if they are tender enough, just wait until a few of the potatoes start to brown – then you know they’re done.  Remove from heat.

Step 3 – In a medium sized mixing bowl, combine eggs and milk.  Whisk until well blended.  Slowly add the onion, bell pepper, spinach and cooked potatoes, mixing as each ingredient is added.  Pour mixture into a greased 10″ skillet.

Step 4 – Heat skillet over medium heat until you can see the egg starting to firm around the edges (you can see this in the photo below), then place the skillet in the oven and bake for 13 minutes.

Step 5 – Remove frittata from the oven and top with the Alpine Lace® Reduced Fat Deli Swiss Cheese and spinach leaves.  Place back in the oven for an additional 2 minutes or until cheese melts.

    I definitely agree that cheese makes everything taste better. Actually I even just eat it by the chunk or slice as a snack if I happen to get hungry between meals! That Frittata looks delicious and certainly would fill you up!

      Me too Michelle! Cheese is probably one of my favorite snacks. I actually found myself snacking on it while I was making this recipe (of course I used pieces I hadn’t snacked on to make the frittata, but you know what I mean). And unlike so many other Swiss cheeses, this one is smooth and creamy with just a little bite. So yummy!

    Oh my Yum!! Your pictures make my mouth water!! I have never attempted a frittata- I had one once at my grandmother’s house and it was so runny- not good! This gives me inspiration to try one myself!! 🙂

      I think baking it made all the difference – that way it was fully cooked through but not burned on the bottom (which was likely to happen if I left it on the burner). Good luck on your next attempt!

    Believe it or not I have never ever made a fritatta. I will have to try. I love swiss cheese. A good one though with a bite to it. The one I bought recently was totally bland. That’s boring. This one is a brand I will look for.

      The Alpine Lace definitely had a little bit of a bite to it, but it was still creamy and melted well. I definitely recommend it!
