What’s for Dinner: Ridiculously Easy Chicken Pot Pie

Mmmm….comfort food.  I can’t get enough of it.  Especially when it’s cooler outside.  So this morning when I woke up to cooler, grey weather, I knew it would be a good day for some comfort food.  I searched all over the internet for a recipe that would work with the ingredients that I already had in the house, and knew I had found a winner when I found this chicken pot pie recipe.  Normally when I make chicken pot pie it’s one of those pre-made pot pies that you heat in the oven.  But this recipe looked so simple…why not make it from scratch?  The recipe had a total prep and bake time of only 45 minutes and the photo was absolutely drool-worthy.  Could making a chicken pot pie really be that easy?

Turns out – yes.  It was ridiculously easy!  And it was a hit with my family!

Like most of the recipes I try, I ended up tweaking this recipe a bit (you can find my version below).  I increased the amount of veggies, sprinkled in some salt and pepper, and added potatoes.  Adding the potatoes increased the total time to make this recipe from 45 to 50 minutes, but it was so very worth it.  Next time I’ll probably add a little bit of onion.  Given its success with my family, this recipe will definitely be part of our regular comfort food rotation!

You will need:
1 3/4 cup frozen mixed veggies, thawed
2 potatoes, peeled and diced
1 cup cooked chicken, cut into bite sized (I used Tyson Grilled & Ready chicken)
1 can cream of chicken soup
1/2 cup milk
1 egg
1 cup original Bisquick
salt & pepper to taste

Step 1 – Preheat oven to 400 degrees.

Step 2 – Boil water on the stove top.  Place diced potatoes in the boiling water and cook until fork tender (approximately 20ish minutes).  Remove potatoes from water.

Step 3 – Place veggies, potatoes, chicken, and cream of chicken soup in 8 inch casserole dish and stir until well combined.  Sprinkle in some salt and pepper and stir once more.

Step 4 – In a medium sized mixing bowl, combine milk, egg, and Bisquick and stir until smooth.  Pour on top of the

Step 5 – Bake for 30 minutes or until the top is golden brown.

Slice, serve, and enjoy!
