Celebrate the Holidays with Fresh Cranberries! {Review & Giveaway!}

The holiday season means company…lots and lots of company.  Some stay for an extended period of time, others just drop by for a quick visit or to exchange gifts, but either way, they’re coming!  To prepare for their arrival, I try to keep the house full of food –  fruit, appetizers, coffee cakes, breads, and other snacks that I can put out at a moments notice.  So I was thrilled when I was given the opportunity to try Concord Foods Cranberry Bread Mix which incorporates fresh (or frozen) cranberries.  Because what says the holidays more than fresh cranberries?  And they’re so easy to get considering that we’re right smack in the middle of cranberry harvest season.

The recipe couldn’t be easier.  Besides the mix, all you need is water, an egg, and some fresh cranberries.  Don’t have fresh cranberries?  That’s okay!  You can pre-soak some Crasins for 20 minutes and use those instead.  Fifty to fifty-five minutes in the oven, 20 minutes to cool, and you’re done.  Fresh, flavorful cranberry bread that they’ll think you spent all day making.  Oh, and did I mention that it smells delicious?  Because it does.  Wow.  And unlike so many cranberry breads that I’ve tried in the past, this one is actually soft!  I selected the lesser of the suggested cooking times to achieve this, but I think that even if you picked the later time, it would still be delicious.  Pair it with some coffee or tea and it’s the perfect for those holiday get togethers.  And if you have any cranberries left over, you can always try to make Cranberry Cashew Cookie Bars or Cinnamon Cranberry Shortbread Cookies (both recipes are relatively easy and available on the Ocean Spray website).  Cookies are always a hit with company in our house!
