Sweet Treats: Ooey Gooey Caramel Marshmallow Brownies

My absolute favorite indulgence are the individually wrapped candies that they sell in drugstores around special holidays like Halloween, Christmas, and Easter.  They make them in all different shapes depending on the holiday (pumpkins, Santa Claus, Easter eggs, etc), and they come in all different flavors – cherry, caramel, marshmallow, chocolate marshmallow – typically covered in milk or dark chocolate.  But the ones that I like the most are the marshmallow and caramel.  Problem is, they can be hard to find.  Well, maybe that’s a good thing considering how much I love them.  But I still get disappointed when I walk in to find that they carry every variety except the one that I want…which is exactly what happened when I walked into my local drugstore this week to find their Halloween candies out, but no chocolate covered marshmallow caramels.  Rather than drive to every other drugstore in the immediate vicinity looking for what I wanted, I decided to make my own and combine my favorite candy with my most recent craving – brownies!

For this recipe you will need:
Box brownie mix, regular 8×8 or 9×9 size + all ingredients required on the box (water, oil, eggs)
7 oz jar of marshmallow fluff
(1) Bag of individually wrapped caramels, 11 oz size
1 Tbsp water
6 Tbsp butter
6Tbsp milk
1 1/2 tsp vanilla extract
3 tsp cocoa powder
4 cups confectioners’ sugar

Step 1 – Prepare brownies as directed on the box.  Place brownies in the oven and bake for the lower of the suggested baking times.  Once toothpick comes out clean, remove from oven.

Step 2 – While brownies are still hot from the oven, spread the entire jar of marshmallow fluff over the warm brownies.  I found the easiest way to do this was to take the marshmallow fluff out of the jar in large dollops, dropping them in various places across the hot brownies, and allowing it to sit on the warm brownies for 1-2 minutes before attempting to spread.  Once a bit warm, it spread much easier.  Once completely spread, place tray in the refrigerator for 1 hour.

Step 3 – Unwrap caramels and place in a microwave bowl.  Add one tablespoon of water and microwave for 1 – 3 minutes on high until completely smooth.  Mine were done after 2 minutes.

Step 4 – Remove marshmallow covered brownies from fridge and pour warm caramel over the top.  Spread caramel evenly.  Place in the refrigerator for 30 minutes.

Step 5 – In a medium saucepan over medium heat, melt the butter.  Once completely melted, add milk and cocoa powder and stir until smooth.  Allow to boil, then remove from heat and stir in vanilla and confectioners’ sugar.  Stir until smooth.  If you find it to be too thick, you can always add a bit more milk…mine needed another splash of milk, but less than a tablespoon.

Step 6 – Remove marshmallow and caramel covered brownies from the refrigerator and pour warm chocolate frosting in the sauce pan over the top.  Place in the refrigerator for 1 hour (or longer, if desired).  Slice, serve & enjoy!

As for serving them, I would recommend keeping these brownies in the refrigerator until about 45 minutes before you want to serve them.  Forty five minutes is the perfect amount of time for the caramel and marshmallow to soften.  If you leave them out longer, that’s okay, but they do tend to get ooey-er and gooey-er as time goes by.  Also, you might want to consider using about half of the chocolate frosting topping, instead of the whole amount.  Although it’s delicious, if you use the whole amount, it will weigh on the marshmallow fluff, squashing it a bit.  The brownies will maintain their shape if they are just out of the fridge, but the marshmallow might start to ooze out after a while.  Totally not a problem for me, but if you want them to look pretty, I would reduce the amount of frosting.

Regardless of how you choose to serve them, these brownies are so amazingly good and a definite “must try” if you like marshmallow and caramel.  While I’m still going to be looking for my milk chocolate covered marshmallow caramels every time I’m in the drugstore, it’s great to know that I can whip up a batch of these even if a major holiday isn’t around the corner.

  7. That looks so delicious. But how do you do it so you don’t eat the marshmallow filling before using it? I have an affinity for that stuff. Would love to try to make this.

    Awesome idea!!! I made these for my sisters betoelhratce party and they were a huge hit with some coffee liquer!!! I used semi-sweet chocolate because i didnt have dark and it was perfect!
