Super Bowl Recipe: Mexican Corn Dip

With the Super Bowl right around the corner, it’s no surprise that my Buffalo Chicken Dip recipe has been my most popular post over the past few days.  I mean it is delicious, after all.  So I figured I would share my new favorite dip with you – Mexican Corn Dip!  And the best part?  So ridiculously easy.  Very few ingredients, 30 minutes in the oven, and rave reviews when you set it out on the table for everyone to eat.  I recently served this at a get together at my house and everyone liked loved it.  It’s unfair that corn has virtually no nutritional value, because I could pretty much live off this stuff.

You will need:

1 can white corn

1 can yellow corn

1 can Rotel (mild or hot will work)

1 package cream cheese (8 oz)

1/4 tsp. garlic powder

Step 1 – Preheat oven to 350 degrees.

Step 2 – Drain both cans of corn.  Place all ingredients in a small, oven-safe baking dish.  Heat in the oven for 350 degrees.  Don’t worry, it may look strange, but it’s supposed to look like this:

Step 3 – Remove from oven and stir.

Seriously, how easy was that?  And, I promise, it’s fabulous!  If you like corn (or in my case – LOVE corn) you just have to try it!
