Three Cheese Mac n’ Cheese Muffins

About a month ago I found this recipe for Mac and Cheese Muffins on Allrecipes.  They sounded delicious and I knew I had to try them, but as I started to cook, it just felt like they were missing something.  I couldn’t exactly put my finger on it…  At first, I thought about adding small chunks of bacon, but didn’t have the time.  And then I thought about maybe mixing in a veggie, but I wasn’t sure what.  And then as I mixed the breadcrumb topping, it came to me – Parmesan!  So here it is, my recipe for Three Cheese Mac n’ Cheese Muffins.
You will need:
2 cups uncooked elbow macaroni
1 tablespoon butter
1 egg, beaten
1 cup milk
1 1/2 cups shredded sharp Cheddar cheese
1 1/2 cups shredded Mozzarella cheese
1/2 cup plain dry bread crumbs
3 teaspoons olive oil
1/2 teaspoon salt
1/4 cup grated Parmesan
Step 1 –  Preheat oven to 350 degrees.  Grease muffin tin (I used cooking spray, but I suppose anything will do).
Step 2 – In a small bowl, mix together breadcrumbs, salt, and olive oil.  Set aside.
Step 3 – Boil a pot of slightly salted water.  Add macaroni and boil for approximately 8 minutes (pasta should be firm).  Remove pot from heat, drain, and return pasta to pot.  Stir in butter and egg until pasta is evenly coated.
Step 4 – Add milk, mozzarella cheese, and 1 cup of the Cheddar cheese to the pasta.  Stir until well blended.
Step 5 – Spoon pasta into muffin tin.  Sprinkle Parmesan over the individual muffins, making sure that each is covered well.  Then sprinkle remaining Cheddar and breadcrumb mixture over the Parmesan.  As you can see from the pictures below, I filled my muffin cups too full.  When I make these in the future, I’ll try to keep them around 2/3 to 3/4 full to leave room for the toppings.
Step 6 – Bake for 30 minutes.  Topping should be light brown.  Allow muffins to cool for at least 10 minutes, then use a spoon to pop the muffins out of the muffin cups.
I questioned whether I would be able to get them out of the muffin tin in one piece, but they popped out easily and kept their shape perfectly.  And best of all, they were absolutely delicious!  Maybe I will try adding bacon next time…
